Technically, a frittata is a dish made from eggs that are lightly beaten with salt and pepper, sometimes embellished with herbs, vegetables, or cheese, and fried in a small amount of fat in a pan. The basic difference between a frittata and an omelet is that the former is cooked on both sides.
