A Sicilian specialty, granita was originally made with the pressed snow from Mt. Etna that was kept in caves and scooped up in the summer. Closer to sherbet than ice cream, granitas are meant to be drunk. A simple sugar syrup is combined with a liquid flavoring, most often lemon juice or coffee.
